Madeira Honey Cake is enjoyed by tourists as well as by most residents. It is on sale in many points around the Island.

Ingredients (about 20 cakes):

  • 3 kg of flour
  • 1,5 kg of sugar
  • 1 kg butter
  • 750 g of lard
  • 30 g of fennel
  • 50 g ground cinnamon
  • 30 g ground cloves
  • 5 g ground pepper
  • 10 g of nutmeg
  • 500 g of cider
  • 500 g almond
  • 500 g raisins
  • 500 g of walnuts
  • 2,250 L of honey (cane)
  • 1 dl of sweet wine
  • 1 dl of brandy
  • Rasp of two lemons
  • Rasp of three oranges and juice of two
  • 50 g of sodium bicarbonate
  • 3 tablespoons of cocoa
  • 500 g of bread in batter

How to do it:

Kneaded all together, leave for three days to ferment;
500g each, placed in lined form with vegetable paper;
Decorate the with nuts;
Bake 40 to 45 minutes at 170 degrees

How do to bread in batter:

Knead 500g of flour with a little yeast and let it rise
